Caribbean restaurant, Turtle Bay, has launched a three-course vegan lunch menu in preparation for Veganuary.
2019 has set Veganuary records, with over 3 million people pledging to give up meat and dairy for the first month of the year. The organisation aims to encourage participants to continue to the diet even after January.
Turtle Bay has also launched their first vegan burger, Kernel Burger, which is made from sweetcorn patties, roasted peppers and sweet chutney – all of which have been given a Caribbean twist.
The three-course lunch deal for £15 includes Sweetcorn Fritters to start, followed by Aubergine Curry and Salted Caramel Brownie for pudding.
The menu consists of:
Starters:
Sweetcorn Fritters – served with hot sauce, pink onions and parsley, £5.30.
Doubles – two puffed up bara roti flatbreads, curried chickpeas, cucumber chutney, £5.30.
Salads:
Supervital Green Salad – kale, avocado, rocket, chickpeas, sugar snap peas, baby spinach, red onion, pomegranate and toasted coconut and citrus lime dressing, £7.50.
Festival Salad – avocado, mango, carrot and butternut squash ribbons, cucumber, crispy gem lettuce, sugar snap peas, rainbow beets, shaved coconut and rocket and citrus lime dressing, £7.50.
Sunshine Quinoa – quinoa, chickpeas, green lentils, fresh pineapple, baby spinach, herbs, pomegranate and citrus lime dressing, £7.50.
One Pots:
Aubergine Curry – sweet potato, light fragrant curry sauce, steamed rice, roti flatbread, £10.
Chickpea and Callaloo Curry – tomatoes, garlic, scotch bonnet, steamed rice, roti flatbread, £9.90.
Pudding:
Salted Caramel Brownie – served with coconut ice-cream, £5.30.
Although the menu was launched in preparation for Veganuary, it will continue throughout the year.
